There isn't really any backpacking on Oahu - nothing I would recommend. There are a few campsites on the beach, but they are all pretty sketch. You certainly wouldn't want to leave anything of any value in your tent. Some spots are locals-only, if you get my drift.

 

There are a couple of hostel-type places where you can pitch a tent; not cheap nor much of a wilderness experience, but a little more safe.

 

On northshore Kauai is the Na Pali Coast. Pretty famous. I think they just did some horror movie about it.

I have climbed at mokeluia (spelling?) on Oahu, a little trad but mostly bolt sport on basalt. Mostly 5.10 and above, with a couple easier. Pretty fun for a full day. It is up on the North shore and overlooks the beach where they filmed the crash scene for Lost. PM and I can give some beta.

I hiked the Na Pali coast this summer, and it was great. As far as the big island goes, Mauna kea is a 10 minute hike, and it is amazing at sunrise, a must do if are into mountains and on the big island. You'll probably be fighting crowds at sunset. We had it to ourselves at sunrise. The road up is great, 5 miles of gravel, the rest is paved, and the gravel is good. You could also hike Mauna loa, it is about 6-7 miles and around 3,000 feet. Probably many others, that is what I know of. It doesn't get much better than wearing your down jacket in Hawaii in August, and swimming at a beautiful beach 2 hours later.
