Alcohol dehydrogenase (ADH) is produced by liver cells and converts alcohol to acetylaldehyde (toxic) which is converted to acetic acid (vinegar) by acetaldehyde dehydrogenase, etc, etc...

 

Interestingly, there is a mushroom that produces an inhibitor of ADH, so if you eat that mushroom (Alcohol inky) and drink a beer, you will get very hammered.
