If you go midweek to avoid the crowds, the SE Buttress on Cathedral Peak is the first suggestion that comes to mind.
Also ones that immediately come to mind: Conness West Ridge (3 pitches up to about 5.6, then loads and loads of 4th class), Conness North Ridge (a rappel down a 5.6 pitch, then great 4th class up to the summit), Tenaya Peak NW Buttress (5.5).
I mentioned just routes around Tuolumne, both because I prefer climbs to summits, and also because the valley will be awfully hot in July.
